We stopped at a small shop that makes birch syrup ( like maple syrup but from birch sap). They tap the trees the same way and use a suction process to get the sap from the trees. They books it down and make syrup. They also make all sorts of things with it like candy and jellies. It has a unique flavor and it’s delicious!
